Tallow and Tallow Acid

Let’s look at tallow and tallow acid in general…

It is the oil obtained as a result of rendering process from ruminants (cattle, sheep, goat). Tallow, which was also used as an edible in the past, has been greatly reduced due to the effects of studies on health and concerns about its cholesterol content.
Two important residues that can be found in tallow are protein residues and free fatty acids. Protein wastes are separated by steam distillation. This requires two actions.

1. Filtration : Bleaching earth is added to the oil. Moisture and sediment are separated by subsequent filtration.
2. Washing with water : Protein residues can be separated by adding 10% water to the oil instead of the filtration process. However, this process requires centrifugation.

Tall oil refined with caustic soda is an ideal oil that has long been used as a frying oil in fast-food restaurants. To obtain this oil, good quality tallow is neutralized with caustic soda. It is washed twice and dried in vacuo. Its free fatty acids ratio should be at most 0.05% and it should smell like tallow. But its use has drastically declined due to cholesterol concerns. Tallow contains very little red and yellow pigments, but a high amount of chlorophyll. However, as a result of bleaching with soil, almost all of the chlorophyll is eliminated.

Because tallow is rich in saturated fatty acids, it cannot be easily digested by young chicks. Experimentally, it has been shown that chicks can better utilize this fat by adding bile salts. However, such an application is not economical because it is expensive. Tallow should not be added to chick feeds until 15-17 days of age.

In chemistry and biochemistry, the fatty acid is usually a carboxylic acid with a long, aliphatic tail. Of the long carboxylic fatty acids, those with 4 carbons (butyric acid) and longer chains are counted as fatty acids; When talking about fatty acids that make up natural oils (triglycerides), it can be assumed that they have at least 8 carbons (like caprylic acid). Most natural fatty acids have an even number of carbon atoms because acetate with two carbon atoms is used in their biological synthesis. In industrial production, fatty acids are obtained by hydrolysis of the ester bond in oils (triglycerides) and separation of glycerol.

Tallow, which is a type of animal fat, is obtained from the remaining part of beef. It is used in food consumption and industry. Tall oil is the most important raw material of soap. On the other hand, it is also used as an additive of grease oil and is also used in many sectors of the industry.
